According to Candice you simply cannot have a Jamaican Patty without the perfect flaky crust. Essentially you are using the same recipe you would for a pie crust. Add flour, quite a bit of salt, turmeric for color, and then mix all this together well to avoid lumps, sifting is a good option. Next you will put that into your mixing bowl and as it’s mixing add in your vegan vegetable shortening and your vegan butter. You will keep adding and mixing until you get to the point where your mixture is just crumbs. You will now add some ice cold water until your crumbs become dough. Moving quickly you will want to make that dough into one big ball, wrap it in saran wrap and put it into the fridge for about an hour and a half.
Now that you’ve got your dough under control it’s time to get started on your vegan alternative to the regular meat filling. Candice took the high road with this part of the recipe and opted to make a beef style filling for her Jamaican patties. In case you don’t know this is a difficult undertaking as ground beef is nearly impossible to properly emulate. The first step in the creation of your beef alternative is to heat up vegan butter in a frying pan until it’s melted.
Now add in about a half of a cup of chopped onions, some minced garlic, and finally some ginger. You will cook that, stirring it often for about 4 minutes. To get the authentic Jamaican flavor in the patties you will also season them with cardamom, cumin, and allspice. You will mix all of this up until it’s quite fragrant. Then add turmeric, thyme, and a scotch bonnet pepper. Once all of this reaches a point where it’s abundantly fragrant add in your fake beef. On top of the fake beef add some vegetable broth, some vegan Worcestershire, pureed tomatoes, and finally fresh parsley. You will mix this all together thoroughly and then let it simmer for 30 minutes. When all of the liquid is reduced add salt and pepper to taste, and last but not least 2 to 3 tbsp. of Jamaican rum. After that just set aside the whole mixture until it’s cool enough for you to handle with your bare hands.
Pull your dough out of the fridge and roll it flat with a rolling pin. Use a bowl to cut circles out of the dough and give them each a bit more rolling to flatten them out. Paint half of your circle dough on the edge with almond milk. This will act like the glue that holds the two edges together and seals your stuffing in. Now take a 1/4 cup of your meat mixture put it in the center of the circle, then fold it over and gently press down on the edges to seal the patty. Coat the outside of you Jamaican patty with Almond milk using a basting brush. Lastly, using a fork create that signature Jamaican Patty looking crust as seen in the video. Keep doing this until you have about 6 good looking Jamaican Patties. Put those on a baking pan in the oven at 400′ for roughly 30 minutes.
